Ingredients:
- 1 tbs peanut oil
- 1 tbs ginger, finely grated
- 1 garlic clove, crushed
- 1 tbs lemongrass paste
- 1 long red chilli, finely chopped
- 500g turkey mince
- 1 bunch choy sum, shredded
- 1 tbs oyster sauce
- 2 bunches broccolini
- 2 spring onions, thinly sliced

Method:
- Heat the oil in a wok over high heat and add the ginger, garlic, lemongrass and chilli and stir-fry for 1 minute or until fragrant.
- Add the mince and fry for 5 minutes or until mince is cooked through. Add the choy sum and oyster sauce and fry for two minutes.
- Meanwhile, cook the noodles to packet instructions and steam the broccolini (quickly douse in cold water once steamed).
- Add the noodles and broccolini to the mince mixture and sprinkle with spring onions.
