Ingredients:

  • Asparagus, woody end snapped off
  • Parma ham or proscuitto, as many slices as needed for the amount of asparagus you have
  • Lemon
  • Olive oil

Method:

  1. Preheat oven to 200c. Cook the asparagus in salted boiling water (or steam) for a couple of minutes, then immediately drain and put under a cold tap to cool.
  2. Put the asparagus in a bowl and add olive oil and lemon zest – as much as you enjoy.
  3. Pair the asparagus based roughly on length and roll up in the ham. Depending on the width of the ham, you may need to halve it lengthways so it doesn’t cover the whole asparagus bunch.
  4. Bake in the oven until the ham is crispy.

    In the meantime, boil an egg so it’s soft boiled.

    Dip the asparagus in the egg and enjoy! Simple as.
